It all started with my very first job, a job as a cook at a Vegan Cafe! Yes, vegan!.. I took the call, I went to the interview, I was excited about everything except for one thing… I knew nothing about vegan or vegetarian cuisine!
Being almost three years far into my Culinary Arts Degree in well-known Johnson and Wales University got me prepared for a lot of things. I learned about soups and bases, exotic cuisines from all over the world, even creating ice sculptures for events. The course that got me the closest to vegan cuisine was cold pantry, and we are talking about boring salads as complements for juicy steaks or chicken stews. You can imagine the dilemma, besides the fact that being a Top Vegan Chef was not something I had on my mind.
